TOMATO ROASTED RED CAPSICUM SOUP

It is the latest receipe one of Australia's most loved ingredients
olive oil. The roasted red capsicum and tomato soup is highly different and healthy to have. The ingredients used for the soup are  750g of ripe tomatoes, three red capsicum, half cup of olive oil, one large onion, two cloves garlic crushed, one tbsp of tomato paste, three cups of chicken or vegetable stock, one tsp of sugar, two tbsp of red wine vinegar, and fresh basil leaves.

*PREPARATION METHOD:
                                    First heat a oven to 180 C. Take tomatoes cutted and capsicum in a baking tray. Pour with 1/3 cup of olive oil and allow it to roast for 30 minutes. If it get soft remove the skin, and chopped keep it aside.

Now, again heat the remaining oil in a saucepan and add the onion, garlic and tomato paste. Before one minute add the tomatoes, capsicum and remaining ingredients, cooking liquids reserved . Keep it in simmer for 20 minutes. Allow it to cool lightly and serve to children and elders with basil leaves if needed.
